So here’s mine. A family and friends favorite called Broccoli Salad. I’m sure there are as many varieties out there as there are families so feel free to adjust or experiment. Enjoy…
2 bunches broccoli(add one more if using only crowns), chopped
1/2 med red onion, chopped
1 lb bacon, fried crisp and crumbled (or use 1/2 c bacon chips)
1 c raisins
1/4-1/2 c sunflower seed kernels
Dressing:
1 c mayonnaise
1/2 c sugar
2 T vinegar
Prepare dressing separately in medium bowl. Combine salad ingredients in a large bowl and stir in dressing just before serving. You will most likely not need all the dressing. Use as much or little as you like. If you want to prep the night before, combine salad ingredients without bacon or sunflower kernels. Mix and store dressing in frig. Assemble salad when ready to serve. This recipe can be lightened up by using turkey bacon and light mayo. You can also adjust all measurements to taste.
